Ingredients:
1 package of Ready-to-Bake Malva Pudding
½ cup Butter, softened
½ cup Sugar
1 large Egg
1 tsp Vanilla Extract
1 cup Flour
½ tsp Baking Powder
1 tsp Baking Soda
Pinch of Salt
2 tbsp Apricot Jam
For the syrup
¼ cup Sugar
¼ cup Cream
1 tbsp Butter
1 tbsp Apricot Jam
½ cup Butter, softened
½ cup Sugar
1 large Egg
1 tsp Vanilla Extract
1 cup Flour
½ tsp Baking Powder
1 tsp Baking Soda
Pinch of Salt
2 tbsp Apricot Jam
For the syrup
¼ cup Sugar
¼ cup Cream
1 tbsp Butter
1 tbsp Apricot Jam
Instructions:
Prepare the Malva Pudding: Follow the instructions on the Ready-to-Bake Malva Pudding package to bake the pudding. Once baked, allow it to cool completely.Make the Cookie Dough:
In a large bowl, cream the butter and sugar together until light and fluffy.
Add the egg and vanilla extract, and mix until well combined.
In a separate bowl, combine the flour, baking powder, baking soda, and salt. Slowly mix the dry ingredients into the wet ingredients until smooth.
Mash the Malva Pudding: Once the malva pudding has cooled, mash it up gently with a fork or your hands into small crumbs.
Combine: Fold the mashed malva pudding into the cookie dough. Add the apricot jam and mix until combined.
Shape the Cookies: Roll the dough into small balls and place them on a lined baking tray, pressing them down slightly.
Bake: Bake at 180°C (350°F) for 8-10 minutes or until the edges are golden brown and the center is set. Let them cool.
Make the Syrup:
While the cookies bake, melt the butter, sugar, cream, and apricot jam in a small saucepan over low heat. Stir until smooth and simmer for 2-3 minutes.
Soak the Cookies:
Once the cookies are cool, drizzle the warm syrup over them, allowing them to soak up the syrup.
