Baked Pineapple Tart

Ingredients:

1 sheet of ready-made puff pastry, thawed

1 cup (200g) crushed pineapple, drained (reserve some juice)

2 tbsp granulated sugar

1 tbsp cornstarch

1 tsp vanilla extract

1 egg, beaten (for egg wash)

Optional: powdered sugar for dusting


Instructions:

Preheat Oven: Set your oven to 180°C (350°F). Line a baking tray with parchment paper.
Prepare Filling: In a small saucepan, mix the drained pineapple, sugar, cornstarch, and 2 tbsp of the reserved pineapple juice. Cook over medium heat until thickened. Remove from heat and stir in vanilla extract. Let cool.
Prepare Pastry: Roll out the puff pastry on a floured surface. Place it on the baking tray and lightly score a 1-inch border around the edges (don’t cut all the way through). Prick the center with a fork.
Add Filling: Spread the cooled pineapple mixture within the scored border.
Egg Wash: Brush the edges of the pastry with the beaten egg for a golden finish.
Bake: Bake for 20–25 minutes or until the pastry is puffed and golden brown.
Cool and Serve: Let the tart cool slightly, then dust with powdered sugar if desired.
